Carnitas Tacos

pre-packaged carnitas from Costco deli section
corn tortillas
red enchilada sauce
lettuce, tomatoes, cheese

Fry tortillas in canola oil and fold over for taco shells(you can make them softer or crispier). Pull apart carnitas. In frying pan, mix meat and enchilada sauce. Season with salt, pepper, oregano, sugar, cumin, and lime juice. Warm through. Serve in taco shells with desired toppings.
