There are few meals that evoke simultaneous cheers from all three of my children (well, the fourth cheers too, but I have a sneaking suspicion it's only because the other three are), but pancakes for dinner are one of them. I don't know if they feel like they're getting away with something, or if they truly have a soft spot for my pancakes, but either way, it sure is nice to know that a few 'cakes hot off the griddle can win my way into the hearts of my children.
In a bowl, whisk together:
2 eggs
1 cup sour cream
1/3 cup oil or melted butter
1 1/2 cups milk
1 tsp vanilla
Add on top of wet ingredients:
2 cups flour
1 tsp salt
4 tsp baking powder
1/4 cup sugar
Whisk together just until combined-DO NOT OVERMIX!! They won't be as tender. Heat griddle to 325 degrees. Grease with butter or cooking spray. Cook until pancakes begin to puff and are just golden brown.

Amen to this one! I'm pretty sure we've made these at least once a month for the last how many ever years I've had your recipe. This is the one they ALL jump up and down for. Love them!
