Baked Potato Casserole

5 lbs red potatoes, cooked and cubed(you can use whatever potatoes you've got)
1 pound bacon, cooked and crumbled
4 cups cubed cheddar cheese
4 cups shredded sharp cheddar cheese(I also just use 8 cups shredded mexican blend cheese)
1 onion, finely diced
1 cup mayonnaise, full fat
1 cup sour cream, full fat
1 Tbs minced herb of choice(chives, green onions, parsley, basil)
salt, pepper and garlic to taste

In a large bowl, combine potatoes and bacon. In another bowl, mix remaining ingredients. Add to potatoes an gently toss. Bake in greased dish uncovered at 325 for 50-60min until bubbly and lightly browned.
